Fajita Bowl

The other night I was feeling like a big plate of fajitas but we were out of tortillas! So I improvised and threw together this healthier version made with quinoa.

  • 1 cup quinoa, cooked
  • 1 can black beans, drained & rinsed 
  • Flank steak
  • 2 bell peppers, sliced into strips
  • 1 avocado
  • Plain greek yogurt

1. Season flank steak with your favorite grill seasoning. Cook the steak & peppers on your grill till lightly charred. Slice into strips once done cooking.

2. Serve: scoop of quinoa, scoop of black beans, sliced steak & peppers, diced avocado, scoop of greek yogurt and all the hot sauce your fiery little heart desires.

You can cook the steak and peppers in a cast iron skillet instead of a grill, just slice the peppers before cooking.
